ABOUT THE REGENTS LUNCH PROGRAM
San Miguel Management is a locally owned and operated service company in Austin, Texas. This past year we served over a half million satisfying meals to a myriad of children, adolescents and adults. San Miguel's objective is to provide tasty, nourishing food that individuals of all ages will eat and enjoy. We want your experience with us to be unparalleled! Besides staffing kitchens for on-site dining, we also cater events, meetings or just about anything that requires food.
San Miguel takes the time to prepare our foods using the freshest natural ingredients. Some are grown, raised or produced right here in Austin by local vendors. We don't use nuts, oils that contain the same or serve fried foods. Furthermore, when possible, we use alternatives to processed white sugar like honey, fruit or real fruit juice. That way, we know what's in our wholesome offerings that we serve to our clientele each day and consume just the same. To achieve nutritious food, rather than just eliminating those things that typically add flavor, empty calories and fat, San Miguel takes our food preparation one step further by incorporating hearty, hand-made fruit and vegetable purees into our offerings. The result achieves everything parents want for themselves and their child, while maintaining it's visual appeal for the kids. This is our secret, and if you don't tell them they'll never know the sliders contain chickpeas, spinach and blueberries; the BBQ and marinara sauce is infused with sweet potato, carrots and watermelon juice; the mac and cheese has cauliflower! Keeping a wide variety of people happy, fulfilled and coming back for seconds is a constant challenge, and one that San Miguel kitchen staff has met or exceeded. There's nothing more rewarding for our staff than having a child tell our chef "This is the best food ever!", or a mom write on a survey "Charlie loves the food and I did not anticipate that he would be using the account so much. I think he has been ditching his sack lunch in favor of your food!".
Food Service Directors Kirsten Eadie, Tracy Mussey and Rose Myers run the show! Kirsten and Tracy manage the day-to-day school lunch operations and catering while Rose handles the back office details. Kirsten received her formal training and education in Culinary Arts from Johnson & Wales University. Her more than 20 years of experience as an executive chef was performed in the luxury hotel and restaurant industry, including a world-renowned Relais & Châteaux resort and The Marriott Corporation. She's been the Executive Chef for the KIPP Austin Schools, where she created and directed The Child Nutrition Program in conjunction with St. David's Hospital, and been the Catering Director for Whole Foods Market. Her culinary knowledge has benefited from her years abroad when she lived in London and Japan. Tracy Mussey also adds her culinary experience of pleasing students and parents having served 22 years as the Food Service Director for Scottish Rite Dormitory (aka SRD), a prestigious girl’s dormitory near U.T.-Austin. She also served in various capacities with luxury hospitality provider Hyatt Regency in Austin, including as Restaurant Manager for the Foothills Restaurant and Grille and La Vista. For long-term Austinites do you recall those famous sizzling fajitas? Finally, Rose Myers uses her culinary institute credentials to support the lunch programs and keep the back office running. In addition to 19 years of experience as the Food Service Director at Hardin House (another prestigious girl's dormitory serving U.T. students since 1937), she also served as a private family chef and Catering Director for The Marriott Corporation at Southwestern University in Georgetown, Texas.
